A Woodland Picnic

Hey! How are you all this Sunday? Gosh hasn't it been hot here in the UK this weekend? It's been so fantastic, such a change from the crappy cold and wet weather we've had for many months. It's bloomin' brilliant opening the french windows in the morning and letting the sunshine flood the living room. We're breakfasting outside in the garden everyday and also having our evening meal out there too.  The sun has also brought about the first of this year's raspberries at the Market Garden, I just love eating and cooking with them.

Yesterday we popped off for a picnic in our local woods. We found a spot in the meadow in long grass and ate crusty bread with a soft cheese and shallot spread (adapted from a recipe in Rachel Khoo's book, The Little Paris Kitchen) and drank some chilled white wine. The Boy played in the grass and I sunbathed. We then finished our meal with White Chocolate and Raspberry Brownies (recipe below), which were so delicious, even if the sun had slightly melted them! On the way home I foraged some wildflowers which are gracing the mantlepiece.

White Chocolate and Raspberry Brownies


  • 125g plain flour
  • ½ tsp baking powder
  • 125g  softened unsalted butter
  • 125g  brown sugar
  • 50g caster sugar
  • 1 egg
  • 1tsp vanilla extract
  • 100g  white chocolate, chopped
  • 100g  raspberries


Preheat the oven to 170ºC. Grease and line a 16x21cm square tin. In a bowl, combine the flour, a pinch of salt and the baking powder.
In a large bowl, use an electric hand mixer to cream the butter and sugars until light and fluffy. Add the egg and vanilla and beat again until the mixture is smooth.
Add the flour mixture and beat for another minute. Stir in the white chocolate and raspberries (do this gently so the berries don’t break up). Spread the dough into the prepared tin and bake for 40 minutes. Leave to cool completely in the tin. Cover tightly with foil until you’re ready to cut into slices.
