An evening picnic

Summer has been a bit of a blow out so far. I hope it bucks up it's ideas for the looming six week school holidays. But every now and then the sun comes out and it's warm. Today was one of blue skies and rising temperatures, and it made me so much happier.  This evening we took ourselves for an impromptu picnic in the woods.  

I was recently asked by Rose and Grey  to take part in their Bloggers Styling Challenge. As I'm a big fan of their online store, I was delighted to be involved, especially when I found out it was all about styling their new cocktail range. "Whoop!" I said,  "if there's champagne to be drunk then I'm your girl". And isn't a cocktail always better if it has a paper umbrella in the glass?  So tonight in the evening sun, I took full advantage of sipping one of my favourite cocktails - Pineapple Mint Prosecco. It's the perfect summer drink, light, fruity and you can't only have one......

All you need is a bottle prosecco and some homemade pineapple mint syrup. 

Firstly make the pineapple mint syrup: (I do this in the morning and then allow it to chill in the fridge throughout the day so it's perfect for early evening). 

You will need a small handful of mint leaves, 250ml of pineapple juice and 100g of caster sugar. 

Add all three ingredients to a saucepan and bring to the boil. Turn the heat down and after 10 minutes remove the mint leaves. Continue to simmer the syrup for about 20 minutes until it starts to thicken. Take off heat and allow to cool. Transfer to a sealed jar. Chill the prosecco in the fridge. 

When you are ready to serve, mix one third of the syrup to two thirds of the chilled prosecco. Pop in a cocktail cherry or two. That's it. Bottoms up!
