Happy Healing Noodle Soup

Well I hope.
As we all still have some coughs and colds in our house, I thought I'd make a healing soup - a bit like chicken noodle soup, but this is a veggie/Asian inspired version.
I call it Happy Healing Noodle Soup.
1 tbs sunflower oil
1 pack dried fine egg noodles (break these up before you put them in the pan)
1.5 litres vegetable stock
1 pack baby corn, each cob chopped into 3 pieces
1 bunch spring onions, chopped into 2 - 3cm pieces
1 red chilli, deseeded and sliced
1 piece fresh ginger, peeled and finely chopped
half a packet of mushrooms, wiped and chopped into chunky slices
a handful of cashew nuts, lightly toasted and then chopped
some fresh coriander to garnish
Heat up the sunflower oil in a large saucepan and then put all your vegetables in to soften for a couple of minutes, including the chilli and the ginger. Throw in the toasted cashew nuts. Then add your stock, bring to the boil and simmer for about 10 - 15 mins until the corn is soft. You can add soy sauce and Henderson's Relish at this point and use as much as you like to add flavour. Pop in a good amount of salt and pepper to taste. Then add in your broken noodles for about 3 - 4 minutes. And that's it! Full of flavour and heat, this is the best soup to comfort, nourish and heal.
