Mmmm, summer food is always good! Today for lunch as i had the day off work, i decided to make myself a mini feast. I made my own pesto from toasted cashew nuts, vegetarian parmesan, Yorkshire rapeseed oil with basil, oregano and lemon thyme. I whizzed it up in the mini processor then spread it on some ciabatta rolls. I added caramelised red onions and slices of portabella mushrooms. Then i cubed some organic yorkshire feta and put it on the top. 10 mins in the oven, and yum!
I finished it off with a bowl of cherries. Really, life doesn't get better than this!
